Bacon & Broccoli Quiche

Most people struggle to get their kids (or husband) to touch broccoli. If so, this is a great breakfast for you. It’s quick and easy, plus you can change up the flavors and substitute sausage if you please! You can also make this true Paleo by omitting the cheese, it comes out just as tasty.


2 lbs of chopped broccoli florets
1 lb bacon
10 eggs, beaten
6 ounces cheese, mozzarella is my favorite
½ cup onion, diced (optional)
½ tsp pepper
1 tbsp cooking oil, choose your favorite

Preheat the oven to 375 degrees F. Grease a 9×13 baking dish with coconut cooking spray. Cut the bacon into small pieces. Heat a large skillet over medium heat and add the bacon. If you are using onions, add those first and cook until they are translucent. Add the broccoli and cook to the desired tenderness and the bacon is crispy.

Add the broccoli and bacon mixture to the baking dish. Sprinkle with half of the cheese and then pour the beaten eggs over all of that. Top with the remaining cheese and bake for 25-30 minutes or until the eggs have set.
