PECAN PIE MUFFINS
Whoever said healthy food doesn’t taste good has obviously never had these muffins. Once you try these Pecan Pie Muffins, you won’t believe they are made from almond flour. The coconut oil and touch of molasses keep these from drying out like most other almond flour recipes. Satisfy your sweet tooth craving without the carb overload and impress your family members with these culinary masterpieces.
Make these nutritious muffins for a quick on-the-go breakfast or bake a batch to eat warm out of the oven. Careful though, they are addicting and you might end up eating the whole batch at once, resulting in some very jealous family members.
1-½ cup pecans, chopped
1-¼ cup almond flour
¾ cup coconut sugar
¼ tsp salt
3 eggs, room temperature
½ cup coconut oil, room temperature
1 Tbsp molasses
Preheat the oven to 325ºF.
Spray a 12 cup muffin pan with coconut cooking spray. In a large mixing bowl, combine the almond flour, coconut sugar and salt. Add the eggs, coconut oil and molasses. Then add the pecans and gently combine.
Pour the batter into the muffin tin and fill each one about ¾ full. Bake for 25 minutes until the edges are slightly brown.
Let them cool completely before removing them from the pan, otherwise, they might break.
